Chocolate mousse (sugar-free)

Try this sugar-free version of a delicious rich chocolate mousse recipe! It’s that good, you would never think that it is sugar-free.

Ingredients

  • 10ml Gelatin
  • 150 ml Water
  • 150 ml Full cream milk
  • 50 gram Cocoa powder
  • 5ml vanilla essence
  • 80 gram salted butter
  • 120 gram Xylitol sweetener
  • 2 Teaspoons Honey
  • 1 pinch salt
  • 145 gram egg white
  • 85 gram egg yolk

Method

  1. Add water to small pot and place on stove plate. Heat and add Gelatine, whisk until dissolved.
  2. Add Milk, Cocoa, salt and Vanilla. Use whisk and dissolve cocoa into mixture.
  3. Add butter and Honey, mix until dissolved. Stir regularly until hot.
  4. Leave to cool slightly. Add Egg yolk and whisk until blended.
  5. Use coffee grinder and grind xylitol sweetener until fine. Set aside
  6. Add egg white and cream of Tartar to power mixer.
  7. Whisk until stiff peaks. Add xylitol sweetener spoon for spoon until well mixed.
  8. Add Cocoa mixture in a thin stream to egg white and blend with mixer on slow speed until well blended.
  9. Use spatula and remove egg white stuck too side of bowl before final mix.
  10. Pour blended mixture into glass bowl and place in fridge to set.
  11. Add 1 or 2 mint leaves for variance while final mix in bowl.
