Cottage pie topped with Nuveg Cauliflower

A mouth watering cottage pie topped with Nuveg cauliflower mash. A healthier winter recipe for the family to enjoy.

Ingredients

  • 4 Nuveg cauliflower portions
  • 500g lean mince
  • 1 onion chopped
  • 1tbsp garlic
  • 1 beef stock cube
  • ¼ cup water
  • 1 tbsp sunflower oil for frying
  • 3-4 tbsp tomato paste
  • 250g mc Cain mixed vegetables ( 1 packet)
  • Salt and pepper to taste

 

Method

  1. Fry the onion until soft.
  2. Mix the water and stock cube.
  3. Add the mince, garlic, stock cube mix to the onions.
  4. Boil mixed frozen vegetables for approximately 3 minutes and drain.
  5. Once minced has browned, add the tomato paste, salt and pepper and mixed vegetables.
  6. Mix well together
  7. Spread the mince mixture into a ovenproof dish or individual ramekins.
  8. Top with defrosted cauliflower mash.
  9. Grill for 5-10 minutes until golden.

  • 4 portions Nuveg Cauliflower (1 box)
  • 4 portions of Nuveg Spinach (1 box)
  • 1 tablespoon olive oil
  • 750g Shrimps (enough for 4 people)
  • Garlic salt
  • Chili powder
  • Cayenne pepper
  • Paprika
  • Black pepper
