Try this sugar-free version of a delicious rich chocolate mousse recipe! It’s that good, you would never think that it is sugar-free.
Ingredients
- 10ml Gelatin
- 150 ml Water
- 150 ml Full cream milk
- 50 gram Cocoa powder
- 5ml vanilla essence
- 80 gram salted butter
- 120 gram Xylitol sweetener
- 2 Teaspoons Honey
- 1 pinch salt
- 145 gram egg white
- 85 gram egg yolk
Method
- Add water to small pot and place on stove plate. Heat and add Gelatine, whisk until dissolved.
- Add Milk, Cocoa, salt and Vanilla. Use whisk and dissolve cocoa into mixture.
- Add butter and Honey, mix until dissolved. Stir regularly until hot.
- Leave to cool slightly. Add Egg yolk and whisk until blended.
- Use coffee grinder and grind xylitol sweetener until fine. Set aside
- Add egg white and cream of Tartar to power mixer.
- Whisk until stiff peaks. Add xylitol sweetener spoon for spoon until well mixed.
- Add Cocoa mixture in a thin stream to egg white and blend with mixer on slow speed until well blended.
- Use spatula and remove egg white stuck too side of bowl before final mix.
- Pour blended mixture into glass bowl and place in fridge to set.
- Add 1 or 2 mint leaves for variance while final mix in bowl.
